Sweet Quinoa Pudding

2 cups cooked quinoa (red or white)
1 cup apple juice concentrate
½ cup raisins
1 cup chopped water
chestnuts
1½ teaspoons vanilla extract
Grated zest of 1 lemon
Pinch of ground cinnamon
1 kiwi fruit (for garnish)

In a medium saucepan, combine:
Cooked quinoa
Apple juice concentrate
Raisins
Water chestnuts
Vanilla extract
Lemon zest
Cinnamon
Cover and bring to a boil over medium heat.
Reduce to a simmer and cook for 15 minutes, allowing the flavors to blend
and the liquid to absorb.
Slice the kiwi fruit for garnish.
Divide the pudding among 5 dessert dishes and top each with kiwi slices.
